This is the best lasagna ever, hands down. I’m not even going to waste time with some long back story because you need to drop whatever you’re doing and make this right now. (Or, you know, this weekend.) It’s another one of my mom’s old standbys, and with good reason—not only is it everything you’d ever want in a meat lasagna, but it freezes beautifully. I’m not sure what inspired Laura Belle and I to undertake the challenge of a Sunday supper (well, we made it on a Saturday, but “Saturday supper” doesn’t have the same ring to it). A couple of months ago we were at the U-District farmers market and spotted some collard greens, and I think that was the beginning. What goes best with collards? Why, fried chicken and biscuits, of course!
